The first step
Using a 14-inch cast-iron skillet, heat the chops over high heat, sprinkle liberally with salt and pepper and swirl in the olive oil. Trim excess fat from the chops, then sprinkle with salt and pepper on both sides. Place the pork chops in the pan and do not move them for a few minutes to ensure a good golden sear forms. Turn the chops and brown well for about 10 minutes on the second side, then transfer to a warm plate to serve.

Stir in the beer or other liquid and return chops to the pan after the onions are lightly caramelized. Add the onion slices and apples and cook for about 8 minutes.
